A graduate of Cornell University’s Hotel & Restaurant Administration program, Bruce applies academic knowledge and practical experience to his leadership role serving as a mentor to his team. A seasoned professional, Bruce works hard to develop and grow individuals who display a positive attitude and strong work ethic coupled with a willingness to learn. Nicki Noel-Stern

Director of Operations

Nicole is a seasoned restaurant operator that first began working in the hospitality industry at 14 years old. From where she started in her first position until now, Nicole has discovered a passion for restaurant operations, management and team development and customer service. In her role as Director of Operations at Mosby and Company, Inc., Nicole is deeply vested in the oversight and day to day management of the company’s two Peet’s coffee locations at PHX. She is an expert at creating efficiencies and ensuring that the current PHX locations are the top performing coffee concepts in the airport. Nicole is a familiar face at PHX because of her current position and she brings a wealth of knowledge to the team.
